Since the beginning of 2022, the global food production, transportation and supply chain have been severely disrupted and fueling the inflation. The Lotus Light charity kitchen volunteers also feel the pressure of the increasing price of the cooking materials when then went to the price of rice in grocery store. The selling price on the tag is 50% higher than a few months ago, and the rice shop owner indicated that this price is just the old crops from last year, price for the new inventory will be much higher due to the rise of production and transportation costs.
According to the volunteers, the Lotus Light Emergency Kitchen program is in urgent need for finical support, as the cost of preparing meals for 100 people has been doubled compared to the year before. To maintain the quality and variety of meal prepared, volunteers of the Lotus Light kitchen program often bought fresh meat and vegetables with money from their now pocket. Volunteers cook all the delicious meals with care and love. And the foods volunteer prepared are very popular and welcome among the elderly, low-income, and unhoused groups. “The residents love the meal!” said Fiona, advocate for the vulnerable group in the Crab Park Tent City.
