Lotus Light Charity Kitchen’s Special Christmas Meal for the Homeless

Lotus Light Charity Kitchen consistently prepares 200 meals weekly for the impoverished elderly and homeless individuals. As Christmas approached on Friday, December 22, 2023, volunteers at Lotus Light Charity Kitchen dedicated extra effort to create a more extravagant lunch for those in need.

Every Christmas, Master Lian Tzi, the president of Lotus Light Charity Society, directs the charity kitchen to craft a special meal fitting for the season of giving. Reverend Lian Wen, a resident monk and skilled cook, played a crucial role in planning and preparing the festive meal. Starting around 10 am on December 22nd, kitchen volunteers, led by Reverend Lian Wen, engaged in the meticulous preparation of the special Christmas meals.

The process involved preparing turmeric rice by combining turmeric, cloves, cinnamon, bay leaves, fried shallots, chicken bouillon powder, and olive oil with a long-grain rice variety. Daikon radishes and carrots were peeled, blanched, and added to the braised beef brisket, cooking until the daikon reached tenderness and the flavors melded. Eggs were beaten, and shrimps were deshelled in anticipation of the shrimp and egg stir-fry. Korean zucchini and cured pork sausages were sliced and stir-fried, while a small amount of iceberg lettuce was blanched, flavored with oyster sauce, and added to the lunch boxes. The volunteers found joy in their work as they aimed to bring happiness to those in need during the Christmas season.

Lotus Light Charity Kitchen expresses gratitude to corporate and individual sponsors for their ongoing support, providing funds and essential ingredients that enable the continuation of meal preparation for those in need, thereby benefiting the local community.

On the same Friday, Lotus Light retrieved 17 trays of food from a downtown Vancouver corporate sponsor, which included items like turkey, tofu gravy, ham, frittatas, and more from a lunch service. This food was promptly delivered to a local food truck operated by the neighboring non-profit organization, Aboriginal Front Door. The food would be utilized or distributed to low-income individuals and the homeless.
